Any good jerky recipes folks are willing to share? Just got a smoker and want to put it to good use.

I posted one a while back you should be able to find it here somewhere. Also I tried using a smoker to make mine once and it wasn't fit for the dog. I use liquid smoke and other stuff for a marinade then use a dehydrator. You may be able to use a smoker I just did not have a good experience with it.

We use the oven with the door cracked open by a spoon and its top notch. My wife says her dad used to make jerky out of the entire deer every time!

I hope to try to make some next week. I figured I would try and leave out the liquid smoke. Not sure if it would be too smoky otherwise.

Do a small batch first so you don't waste a lot of good meat if it doesn't turn out. I've been making jerky for about 40yrs and have tried the oven/smoker and dehydrator. When you look at how it was originally made it was just hanged and dried maybe a little smoke to keep the flies off the meat. I believe the Native Americans were the one to introduce smoking meats to the rest of us.

use Dennis's recipe, he makes the best I have some deer loin sliced up to try today with a premixed receipe from PS seasoning. If this goes well I will get the ingredients to try Dennis's receipe. I used a beef roast on the last batch. I think the fat content was 2 high because it had the consistency of steak.

I never make (beef) jerky. It isn't that I don't like it just have never tried to make it. I believe you would have to use the leanest meat you could find.
