To begin with, bear with my ignorance in how to format this as it should look. Ingredients of marinade are 2 tbsp cayenne pepper, 2 tbsp.black pepper, 2 tbsp. lemmon pepper, 3 tbsp. onion salt, 3 tbsp. garlic salt, 1 cup brown sugar packed, 1/2 cup liquid smoke, 1/2 cup soy sauce 1 cup teryaki sauce, 30 jalapeno peppers, 3cups water. Put the jalapeno peppers de-stemmed with seeds and part of the water in a blender an puree the peppers, then mix all the ingredients together. This is the mix I used for the jerky that was marked sweet hot. for the mild one I left out half the jalapeno's and the brown sugar. This much marinade will do about 8-10lbs of meat which will yeild about half that weight in jerky. I slice my meat about 1/8" thick. Marinate overnight to 24hrs, takes 6-8 hrs. in the dehydrator. It is recommended to mix the meat around in the marinade a couple times over the soaking time. also if you mix the meat around with your hands don't rub your eyes you will be sorry, I know.
