I just put 6lbs of jerky meat in a new marinade to bring to the spring challenge. I'm really hoping it turns out good. Will be looking for guinea pigs.

Nice! Do you smoke or dehydrate your jerky? I dehydrate, I tried smoking it before and it wasn't fit to eat so I am sticking with what I know. This is a different concoction I am trying out. You really can't tell from tasting the marinade what the finished product will taste like. I'm going to give it a 3 day soak this time because of some of the ingredients I want to let the flavors soak into the meat good.

Yep, I get ya. I have made the same mistake. Although giving the jerky an hour of smoke is enough to add flavor without making it taste like an ash tray. Care to share your recipe?

One of my recipes is listed on this thread as venison jerky recipe. I don't want to give this one right now till I see how it turns out.

For anyone who is coming to the spring challenge, if you are allergic to nuts you will not want any of this batch. I will write on the bag that it has nuts added to the concoction. I will also bring a little of the other kinds I brought last year. Just FYI, don't need to have anyone having a reaction.

Guess you will be going for the other kinds as I did a kind of trail mix concoction and it also has peach and cranberries and other misc. ingredients. It was just something new to try and I am not sure if I will make it again.

Well I just mixed up a couple different batches of marinade for jerky, one mild one spicy. Will be sending some down to the fall shoot for all of you who make it. I wish I could, but can't make this one. Enjoy gentlemen and ladies.

You should try real Aleppo powder on jerky. Dont mix it into the marinade. Leave it mild. Let the meat dry until its slightly tacky and dust with the Aleppo. Good Aleppo powder is mild and naturally a little bit salty.

Maybe next time. I usually use dried ground whole jalapenos. I adjust amount for heat. That is all the hotter I like. I used to do the wild hot stuff but it doesn't like me anymore.

Aleppo powder is not hotter than jalapeno powder. Mine is probably a little milder than jalapeno but my jalas are pretty hot.
