I don't know how to post pic's, but its too late now anyhow I just had me a mess of fried green maters and bream. What a life, everyone should eat this good.

By bream you mean sunfish/bluegill?...I think they are awesome eating if you get enough for a meal. That name covers a huge variety of fish just like perch is kinda generic. What my dad calls yellow perch i call sauger.

My older brother gave me a couple packs last hunting season and I ran across them in my freezer while getting some venison out to make jerky. They are marked bream as they call them in Tenn. My brother is also from Ohio like me and knows that I call them blue gill. Anyway they are hard to beat for eatin'.

I love them. We scale and gut them. Cut off the head/fins and fry up whats left. Even a large basket of small ones turns out great. Meat just falls off the larger bones and IMO cooking them "bone in" adds flavor.

I cut the sides with a knife makes easier eating, also to avoid soggy fried green tomatoes, cut about 1/4 think then sprinkle both sides with salt, it pulls out almost all the moisture after a couple hours of counter drying...very crispy...

I didn't know that about the green tomatoes, I'll have to go out to the garden and get some and have some for supper. Thanks for that tidbit.

Not trying to provoke y'all to jealousy but I just had me another mess of (crispy) fried green maters, fried cabbage, and fried sausage. Now I'm just sittin' here listening to my arteries harden.

One of my absolute favorite foods is fried okra. Our okra ain't doing so hot this year either.
