Put up 4 doz pickled eggs Monday. They large so it made 5 quarts. 2 quarts with beet slice for red color, 2 quarts with some of last years pickled Jalapenos and 1 with onion slices.
Easy = boil eggs and remove shells (there is a secret to easy peeling), put eggs in jars, put in other stuff like 1/2 tsp salt- 1 tsp pickling spice - couple cloves garlic - onion slices or beet slice or Japaleno slices, cover with boiling hot 50-50 white vinegar - water, apply lids. Process in water bath. You might see some at the August challenge. I will do another batch in July. 10

question- how long do they keep?
I know many people do not like beets/pickled eggs etc.....but I have always liked both/we are in the minority.//lol
my wife does our pickled eggs but I think I will try your recipe...sound great!
first batch of beets in/2nd in approx. a week....... beet tops make a great spinach dish as replacement for actual spinach.

secret egg peeling,would like your input here.
I do know older eggs say 3 or 4 weeks old are easier to peel, & iirc bump the sharp end of the egg to crack the shell is how I do it.
your method?    ?tia

If you take a glass and put a little water in it, put the egg in it, then cover it and shake it you can peel the whole shell off pretty easy.

I just peel mine right after cooling them. Shells come off easier then vs after a day in the fridge.
BTW if you have a Costco nearby you cant beat the egg prices. 3 dozen Double A extra large eggs at mine are $1.49. I cant even find Double A eggs anywhere else.

I also would very much appreciate any egg peeling advice. Last month I boiled a dozen eggs to try to smoke. After about 6 of the 12 eggs came out looking like they servived an astroid shower I made egg salad instead.
Was also thinking what if you smoked the eggs first and then pickled them?

Peel them as soon as they are mostly cooled in cold water (about 10min). Crack the shells a few times then roll them on a cutting board to loosen the shells. My very fresh eggs peeled with ease using this method. Peeling them under running water also helps.

The easy way to peel fresh eggs is to steam them for 22 minutes, dump them into cool water until eggs are cool. Crack eggs and then you can pull the shell off in two pieces. I have been steaming eggs this way for a couple of years and is by far the easiest way and I haven't tore any of the white.

+1 on the steaming. that is how we do hard (boiled) eggs. We usually do a dozen at a time.

I use a egg steamer too. Mine takes 18min for 7 extra large eggs. I let them sit for another 5 and then drop in cold water.

Steaming to hard boil and crack correctly is the only way to go. Works super. We put up a few from time to time. We usually come back to the basic beet juice recipe as the winner. You adjust the ingrediants to your taste buds.
