A Neck Roast is one of my favorite cuts of meat from a deer. IMO, it is the closest thing on a deer that resembles a Beef Chuck Pot Roast.
I fixed one in the Pressure Cooker for dinner tonight and it was fall off the bone tender, and delicious!

I take mine and debone, then I tie the roast up and cook the same way.

Our deer in VA are smaller than those so I do the neck roasts on these deer with the bone in to try and get a little more yield.
Probably don't really amount to much difference though.
