Went fishing yesterday and caught a boat load of fish..... Since I like to eat as much as I like to shoot guns I always keep my catch, as long as it a good enough mess to clean and put some in the freezer. Tonight Mindy and I are having Baked Readear with butter and Lemon Pepper. Some Asparagus and baked beans to go with...I had one yellow perch so I put him in there with them. Going to bake these babies for about an hour and a half at 325 and I will let you know how they turn out.......  Well. I said I'd let you know how it turned out and I must say it was delicious.  And a picture is worth a 1000 words.... Not much more to say here....

Man ... That's a meal fit for a king right there!
Tough to beat some fresh Shellcrackers on the plate.
I'm just curious but did you end up cooking them the whole 1.5 hrs. @ 325 deg.?
That sounded like a long time to cook them @ that temp. to me, but judging from your pics they appear to be perfectly cooked, so I was just wondering.

Bill..
I checked them at 45 minutes and turned them over.. They were falling apart at that time so I turned the heat down to 275 and took them out 30 minutes or so later.. They were cooked to perfection...

Yeah, I could tell by the pics that they were perfectly cooked, i.e. flesh was still moist yet flakey.
I've been trying to do more of my fish on the Grill & in the Oven lately, as opposed to frying them, for the health benefits. But I do still love me some fried occasionally though .

Sunfish is terribly over looked for eating. I find it to have a great flavor especially left whole like you did. Years ago a store near me used to sell Florida bluegill. They were monsters and cheap. Supposedly taken from slightly brackish water. It was some of the best fish ive ever eaten. The closest thing to them here are goggle eye aka rock bass. Its too hard to find good sized redear around here unless you luck into a nice farm pond or small private lake.

Well us guys here on the coast have a different outlook. Check on the recipes for minner stew etc... looks like Hank was eating the bait to me. LOL! Just kidding but if alive they are the right size to bring in some monster flatheads or channel cats. think BIG! Or at least use them for coon bait and then you have something worth roasting and really good. 10
