I hung up the mz for the season. I ended with 5 deer and that's more than enough for us.
I smoked the deer leg after brining overnight. Smoked till 150deg, let sit in smoker one hour, meat temp was still 146deg, wrapped in parchment paper and towels, and let rest in a cooler for 5 hours. The results were incredible. I took to a Christmas party and gave out some to my buddies. Every comment was that it is unbelievable. Many said it is like brisket. I still dont have any smell and barely any taste from the covid still. But the moisture and texture, and looks on others faces told the story. Sorry that I didnt get any pictures.
I am going to repeat the other part of it for work next week. So will get pictures then.
