Another super easy and great tasting treat on the smoker. Take a large pepper, cut in half, remove seeds and devein, wash. Take whipped cream cheese, taco seasoning, and shredded cheese and mix together, fill pepper halves, wrap in a piece of bacon, sprinkle with rub, and 250deg for 2 hours or so. Oh man! The other stuff is venison tenderloin and backstrap seared on the grill. Yum yum.

They look amazing. A guy at work and I have been having pepper wars since last year. He has a legit commercial smoker. I have a home owner pellet grill. I like to take jalapeno infused cream cheese, parm, sour cream, minced banana peppers, shredded cheddar, minced garlic and are you ready?............shredded smoked brisket. Mix it all up and stuff the peppers like you do. Before I stuff em, I dust the bottom of the pepper with fine Cheyanne pepper. After they are stuffed I put an 1/8" slice of sharp cheddar on top. A few hours at 200 on the pellet grill with a cast iron pan full of smoldering charcoal and applewood chunks and mmmmmm. I almost always make too much filling and I put it in a tupperware container and freeze it for the next time.

I forgot a major ingredient. Crumbled cooked hot breakfast sausage. How did I forget that! I have also made a seafood version with all the same basic ingredient except minus the brisket and add canned minced clams and shredded crab claw. Again, mmmmmmmm. The combo's are endless and I can eat these like a meal! So glad you posted this deadeer.

Sounds like a heck of a fine meal. I enjoy cooking and sharing recipes and ideas. Seems like everybody has their own twists on things, so no better way to learn than share experiences. Keep em coming!
