I am wanting to know how much bolt thrust I can get away with on a .308 bolt head in an AR15 platform? I have little knowledge of AR15s and do not wish to go with an AR10 platform due to size so I am contemplating a wildcat chambering.

I'm no Guru but I've built and own several
unless it's a full size .308 bolt head I wouldn't trust it, these days there are several manufacturers doing in between platforms for the .308 based cartridges with full sized bolt heads that don't weigh a ton, like in the 7.5 lb range, personally I don't own any wildcats but there are many out there that run well. Talk to Mike Milli @ D Tech and he can tell you what you need to know, also AR Performance has some hopped up offerings and you can buy ready to go barrels and bolts from him and he's a great guy to deal with, he turns out a good barrel for a good price.
A fellow can build a large frame AR these days that's not a Heifer and still shoot pretty soft, it's not cheap though, lightweight bolt carriers with adjustable gas blocks and purpose built buffer systems can get it done but they are costly.
The major thing to remember on an AR platform is to buy the best barrel you can afford with the parts to make it run right and a good trigger,the rest of the parts are mainly options..
When I'm not toting around a muzzleloader my favorite carry gun is a 16" barreled 6.8, its short ,(31" collapsed) and accurate, it's good for 325 yds or so with the load I shoot and is a killer
